Parmesan Potato Salad (Mayo Free)

This delicious potato salad throws traditional ingredients out of the window. What you’re left with is a top 9 free version that’s packed with flavours, is creamy, and delicious.

Ingredients

  • 800g/28.5 ounces Organic Red Potato, Cubed

  • 3 tsp sea salt

  • 40g/1.5 ounce Leek

  • 240g/8.5 ounces Organic Yellow Onion, diced

  • 1 tsp Sea Salt

  • 112g/4 ounces Parmesan Cheese of Choice (we used Follow Your Heart Dairy Free)

  • 200mL/7 ounces Milk of Choice (we used homemade dairy free milk)

  • 2 tsp Organic Dried Marjoram

  • 3/4 tsp Organic Garlic Granules

  • Pinch Organic White Pepper



Directions

  • Start by dicing your onion, slicing your leeks into quarters, and cubing your red potatoes. For the potato, I like to keep the skin on.

  • Place the potatoes in a pot and cover with water by about an inch. Add 2 tsp of sea salt and mix, then bring to a boil. Check on your potatoes after 6 - 8 minutes. The should be easy to pierce with a fork, but not mush. The boil time is generally 7 - 10 minutes.

  • Whilst your potatoes boil, heat a non-stick pan on medium-high heat (7.5/10 for us). Add 1 - 2 Tablespoons of cooking oil, then your onion, leek, and 1 teaspoon of sea salt. Mix together and cook for 10 minutes. Stir as needed to prevent burning/sticking, but not so much as to hinder browning.

  • When your potatoes are done, drain the water, then place in a large mixing bowl. Add 1 teaspoon of salt, mix, and taste. Add more salt as you see fit, but keep in mine, we’l be adding parmesan cheese which tends to be salty. Next, add the onion mix to the bowl.

  • Return your onion-cooking pan to the stove. Heat on medium (5/10 for us) and add your milk and cheese. Once the cheese is completely melted, turn the heat off.

  • Add this to your mixing bowl along with your garlic granules, marjoram, and a pinch of white pepper. Mix the potatoes, veg, and cheese mix very well. Taste one last time before calling it done.
