Ingredients
5 TBSP Cooking Oil/Fat of Choice
900g/2 lbs Organic Ground Chicken, lean
300g/11 ounces Organic Green Onion, sliced
285g/10 ounces Organic Pineapple, small dice
80g Organic Maple Sugar
3 tsp Sea Salt
2 tsp Chopped Ginger, optional
2 tsp Organic Ground Turmeric
Sprinkle Organic Black Pepper, optional
650mL/24 ounces Milk of Choice
1.5KG/54 ounces Organic Sushi Rice, weighed, cooked
1.5 tsp Sea Salt (see note in directions)
Directions
Before making this recipe, you’ll need to either have a pot of rice cooking, or have leftover rice to pull from in the fridge. This is a big batch recipe so you have leftovers to pull from. Feel free to cut the recipe in half if it’s too much for your family.
Prep your pineapple and green onion. Heat a large/deep non-stick pan on high heat (8/10 for us. Add your cooking oil and once it’s hot, add the first set of ingredients listed (green onion - black pepper). Mix everything together very well. As you mix cooks, break the chicken down into small pieces. This also helps to ensure your salt and seasonings are well distributed.
Cook for 12 minutes, then add your milk. Reduce the heat to medium (5/10 for us) and add your cooked rice. If it’s unseasoned, add the 1.5 teaspoons of salt. If your rice is already seasoned, mix everything together and taste before adding anymore salt.
Continue to cook until the milk and rice are heated, then you’re ready to serve. Your leftovers are freezer friendly. I like to freeze ours in 8 ounce deli containers, which is a good size for our kids to enjoy in one sitting.
