Corn Free: Source safe ingredients. You may need to swap the beef for bison if you don’t have a safe option. Both North Star Bison and The Honest Bison have options.

Ingredients

  • 10 ounces Broccoli, frozen

  • 3 TBSP Cooking Oil of Choice

  • 300g/11 ounces Organic Yellow Onion, diced

  • 1/2 tsp Sea Salt

  • 600g/1.3 lb Grass Fed Ground Beef

  • 1.5 tsp Sea Salt

  • 2 TBSP Shiitake Mushroom Powder (other varieties will work too)

  • 3 TBSP Mirin

Directions

  • Start by getting your broccoli in your steamer pot. This ensures that by the time you need it, it’s ready to go. Next, prep your onion. For mushroom powder, we use our spice grinder to make this using dried mushrooms.

  • Heat a large/deep non-stick pan on medium-high heat (7/10 for us). Add your oil and once it’s hot, add the onion and 1/2 teaspoon of sea salt. Mix to combine, then cook for 10 minutes. Stir as needed to prevent burning, but not so much as to hinder browning.

  • Now add your ground beef, 1.5 teaspoon of sea salt, and mushroom powder. Break the beef into small pieces as it cooks. This also helps to mix in and distribute your salt and mushroom. After 5 minutes of cooking, add the mirin and steamed broccoli.

  • Mix again and continue to cook for several minutes. Your ground beef should be thoroughly cooked before serving. That’s it! It really is an easy skillet meal, and a real crowd pleaser.

Packing the Lunchbox

If your child eats this cold, pack as usual in the lunchbox. If your child eats this warm, heat first and pack in a thermos. Don’t forget to pack this lunch with an ice pack.
