Ingredients

  • 300g/11 ounces Organic Yellow Onion, diced

  • 225g/8 ounces Organic Red Bell Pepper, diced

  • 675g/24 ounces Bacon of Choice

  • 900g/32 ounces Marinara Sauce of Choice (we used Costco’s Kirkland Organic Marinara, top 9 free and top 9 free equipment)

  • 3 TBSP Organic Mushroom Powder (homemade in spice grinder)

  • 4 TBSP Organic Maple Sugar

  • 112g/4 ounces Shredded Cheese of Choice (we used Follow Your Heart DF Parmesan Shreds, top 8 free, new recipe is coconut free)

  • You’ll also need a pizza dough of your choosing. We like the Wholly Wholesome gluten free pizza dough ball found in the freezer section.

Directions

  • Start by prepping your produce, then cut your bacon into bite-sized pieces. Heat a large/deep non-stick pan on high heat (8/10 for us). Add your onion, bell pepper, and bacon. Oil is not necessary as the rendered fat from the bacon will become the cooking fat as well. Cook for 10 - 14 minutes, then drain off the fat if needed.

  • Return the mix to your pan, and reduce the heat to medium (5/10 for us). Add your sauce, mushroom powder, maple, and parmesan. Mix very well. Cook for 5 - 10 minutes, or until the cheese has fully melted and is thoroughly incorporated. Turn the heat off and set aside. Preheat your oven to the baking temperature of your pizza dough. We bake ours at 400f.

  • Next, place a large piece of parchment paper of on flat working surface for your dough. Additionally, line a muffin tin with paper liners. Place down some flour, then place down your dough. Portion your dough into 12 equal parts, then roll each portion into a ball and flatten. If you have a bit of flour on both sides of the dough, working it and transferring it is easier in the end.

  • As you make each disc, transfer it to a muffin cup and try to have it come up the sides as equally as possibly. Once your 12 discs are done, spoon some filling into each cup. Top each pizza muffin with a little shredded cheese and Italian seasoning.

  • Bake your pizza muffins according to the dough instructions. In our case, 17 minutes at 400f produces the perfect pizza muffins.
