Egg Rollups
Eggs + tortilla, rolled up into one, easy & fun to eat lunch idea.
This idea owes its greatness to simplicity. All you need? Two eggs, 1 tablespoon of butter or oil, a frying pan, and a tortilla. Details and tips below.
GROCERY LIST*
Eggs (2 per rollup)
Tortilla
Butter (1/2 tablespoon per rollup)
Salt & pepper (optional)

ASSEMBLING FOR THE LUNCHBOX
Scramble 2 large eggs in a small bowl and set aside.
Place a frying pan on the stovetop and melt button on medium high heat. Add scrambled eggs, turn heat to medium low, and let them cook like a flat pancake. Season with salt and pepper and set aside.
Heat the tortilla for 5-10 seconds in the microwave to soften. Place on a cutting board. Top with flat-fried egg. Roll up from the bottom, using your fingers to hold tightly.
PACKING THE LUNCHBOX
Slice the tortilla rollup into bite-sized pieces. Place in the lunchbox.
