Cobb Kebabs
Cobb Kebabs are a fun way for kids and adults alike to eat salad.
Hard cooked eggs + hearty salad ingredients + lollipop sticks are all you need to make this happen. Details below.
Grocery List*
Eggs (1-2 per lunchbox)
Lettuce
Grape or cherry tomatoes
Cucumber
Avocado
Bacon, ham and/or chicken
Cubed cheddar cheese
*The beauty of Cobb Salad is that the ingredients are variable. Eliminate what you don’t enjoy, add what you love. Most importantly, place the ingredients on a stick for a fun lunch experience!

To hard cook the eggs:
Bring a pot of water to a boil. Add the eggs and set a timer for 8 minutes. Remove the eggs from the water when the timer goes off and place in an ice bath to stop cooking.
To make bacon with less mess:
Place bacon strips on a baking sheet lined with parchment paper. Place the baking sheet in a cold oven, and preheat to 400 F. Bacon should be fully cooked in 15-20 minutes, oven dependent.
Packing the lunchbox
Slice the egg in half lengthwise.
Prep each remaining ingredient by chopping into roughly the same size (preferably bite sized).
Place them on a lollipop stick and into the lunchbox.
*Notes:
You can adjust the ingredients here to your liking. Each kebab uses one hard cooked egg, and one bite of each additional ingredient. The purpose of placing items on lollipop sticks is to include both the protein from eggs, chicken, bacon and cheese with veggies (like lettuce, tomatoes and avocados) on one fun to eat kebab.
