Breakfast Sandwich
Breakfast for lunch is always celebrated here. A classic Breakfast Sandwich is a nod to our home in NYC and beloved by my crew.
GROCERY LIST*
Eggs (2 per serving)
Breakfast sausage patty
Sliced cheddar cheese
Hard roll or mini broiche buns
1/2 tablespoon unsalted butter
1 teaspoon chopped chives (optional)
*The classic version of this sandwich is made with bacon and American cheese. Feel free to use that instead if you wish!
ASSEMBLING FOR THE LUNCHBOX
Scramble 2 large eggs in a small bowl and set aside.
Place a frying pan on the stovetop and melt button on medium high heat. Add eggs, turn heat to medium low, and lightly scramble in the pan. Remove and set aside. In the same pan, add the sausage patties and cook as directed. If using bacon instead of sausage, cook as directed.
Slice the bun in half, add cheese to one side and lightly toast in a toaster oven or under the broiler until the cheese has melted. Add egg and sausage. (*feel free to add tomato or sliced avocado here too!)
PACKING THE LUNCHBOX
If you plan to send this to school in a lunchbox, prepare the sausage ahead of time and place in the fridge until ready to assemble. This will save a few precious minutes in the morning.
