There really is nothing like fresh, fun recipes to start the school year on a good foot. My son is bringing his lunch to school twice a week for the first time this year so packing a lunch has a whole new level of excitement for him. It also means I'll now be packing two lunches on some nights, so straightforward recipes are a must. The kids and I spent a rainy day recently at the bookstore and came home with the new book from Catherine McCord, Weelicious Lunches.Here's what I love: the recipes are appealing, healthful and fun without being too involved, complicated or time consuming. Seriously - how can you ask for more?
My kids added their favorites to our LaLa Lunchbox Food Library and so the fun began. Here's what my son chose for his lunch yesterday:
Those Banana Dog Bites are beloved in my house. Essentially it is a tortilla with nut butter and a banana, rolled up into a papoose of awesomeness. We are nut free so I use sunbutter, and my son gobbles it up! The cinnamon roll sushi is also a big hit, and eaten as a snack in our house. We made this recipe together after school - funny enough, using my son's Play-Doh rolling pin. He rolled out a piece of bread (we use Bread Alone spelt bread) and I spread a layer of cream cheese on top. I watched his eyes grow big with excitement as I drizzled honey and sprinkled cinnamon on top before rolling it up like sushi.
