Super Fast Breakfast

You know when your alarm goes off and you thank your lucky stars for the person who invented snooze? Ah. Well, that's usually how it goes in my house... until I wake up in a panic two snoozes later and have to operate at lightning speed to get everything done in the morning. 

My sister recently told me about a no-bake oatmeal chia yogurt combo that sounded intriguing. And so thanks to The Yummy Life, I have a new breakfast option to help me out on those mornings when I accidentally press snooze one more time than I should. 

I tinkered with the recipe a bit. You can use the link above to access the original recipe and also find loads of delicious sounding variations. 

Below is what I threw together last night. Admittedly, it would be better with chia seeds, not chia bran but alas, the healthfood store by me was out of chia seeds so I settled on chia bran. Same great health benefits but not the same great texture benefits. Next time I'll also experiment with adding fruit. My husband and I both had this for breakfast, which saved a few minutes. And let's face it, when you wake up at 6:40 and have to get two adults and two kids out of the house before 7:30, every minute counts. 

Refrigerator Oatmeal 

  • 1/2 cup uncooked old fashioned rolled oats
  • 2 TB chia bran (my health food store was out of chia seeds!) 
  • 1 teaspoon cinnamon
  • 1 teaspoon maple syrup
  • 1/2 cup plain lowfat greek yogurt

Directions

In a tupperware, add oats,  yogurt, chia bran, cinnamon and maple. Stir well to combine and put on lid. Refrigerate overnight or up to 2 days. Eat chilled.
